Study of hydrolysis of surcrose, progress of this reaction is monitored with the help of polarimeter because a solution of sucrose is dextrorotatory and on hydrolysis, the mixture of products obtained becomes laevorotatory. That's why this reaction is also known as inversion of cane sugar.
